Goodr Recipes: Ground Turkey and Black Bean Quesadilla + Pico de Gallo

Ground Turkey and Black Bean Quesadilla + Pico De Gallo (Serves 4)

Taco Seasoning (optional)

Ingredients:

  • ½ tsp smoked or regular paprika
  • ½ tsp garlic powder
  • ½  tsp onion powder
  • ½ tsp chili powder
  • ¼ tsp ground cumin
  • 1 tsp salt
  • ¼ tsp cayenne pepper

Directions:

Mix seasonings in a bowl. Store in a dry place.

Ground Turkey

Ingredients:

  • Homemade or Store bought Taco Seasoning
  • 1 pound ground turkey
  • 1 can Black Beans, strained
  • 1 can Diced Tomatoes, strained
  • ½ Yellow Onion, diced
  • ½ Green Bell Pepper, diced
  • Oil

Directions:

Place a medium or large pan on medium heat. Once pan is heated, lightly coat the pan with oil. Once oil is heated, add bell peppers and onions to pan. Saute for 3 minutes then add ground turkey. Once ground turkey is added season to taste with taco seasoning. After 5 minutes add the black beans and diced tomatoes. Cook mixture until turkey is browned then remove from heat. Taste and adjust seasoning as necessary.  

Quesadillas

Ingredients:

  • 2 cups Shredded Cheese
  • 4 large flour tortillas
  • Oil

Directions:

Preheat oven to 425°. First, coat your palm in oil, then lightly coat one side of the tortilla. On the uncoated side, add a handful of shredded cheese and two spoonfuls of ground turkey to half of the tortilla.  Fold the tortilla then place it on a lined baking sheet. Bake for 15 minutes, flipping halfway. Serve with pico de gallo.

Pico De Gallo

Ingredients:

  • 5 roma tomatoes, insides removed and diced
  • 1-2 limes
  • Handful of cilantro, finely chopped
  • ½ c white or yellow onion, diced
  • 2 tbsp jalapeno, diced (optional)
  • Salt to taste
  • Tortilla Chips

Directions:

Add tomatoes, onions, jalapeño, and cilantro to bowl. Next, add lime juice and season to taste with salt. Mix and adjust seasoning as necessary. Serve with tortilla chips.
